What to make for food today.  

Pumpkin muffins

Rice Wraps:  Onions, garlic, celery, garbanzo beans, paprika, cumin, chili powder, quinoa,  brown rice and greens.

Duck (raised by us) butter ball potatoes, collard greens, leeks, celery, garlic, salad and homemade olive oil dressing.

Local and Organic.  

 

It is important to fill your body with chemical free good food.

1/2 cup olive oil or sunflower oil

2/3 cup of honey ( I actually do 1/2)

1/2 tsp vanilla

2 eggs

1 cup pumpkin puree

3 1/2 cup flour

( I like to do spelt or when I am baking a gluten free recipe I use Namaste all perfect flour blend blend)

1 tsp baking soda

1/2 tsp baking powder ( i never use baking powder)

2/3 tsp salt

1 tsp cinnamon

1/2 tsp all spice

1/2 tsp nutmeg

1/2 cup chopped walnuts 

1/2 cup milk of choice or water

 Sometimes I add a cup of  organic dark chocolate chips and crushed flaxseed's

Beat oil honey and vanilla together.  Add eggs one at a time while beating.  Mix in pumpkin and nuts.  Combine dry ingredients in a bowl.  Stir dry mix into pumpkin mix alternating with water or milk.  Do not over beat.  Spoon batter into greased muffin tins, about 2/3 full  Bake at 325 degrees for 30 to 35 minutes 

Makes approximately 2 dozen 

 

If you can't have eggs you can use chia seeds instead:
