Johanna had a craving for marshmallows, so I decided to make some with her. We used organic ingredients (except couldn't find any organic flavorless gelatin - any tips on where to get that are welcome!). We made almond flavoured marshmallows with lots of cocoa powder and only a little bit of powdered sugar on them, and they turned out great. Still, one can get tired of marshmallows...
I don't view them as a great snack, since they have corn syrup and sugar, but if she craves them, it's better that we make them. She hasn't been getting any sweets that aren't homemade lately!

I actually used less corn syrup than the recipe calls for, and I substituted maple syrup. I will talk to Sophia. I am hoping the marshmallow phase won't go on much longer, but it was a fun chemistry experiment! Johanna has been craving sweets less lately, and eating more protein, which is helping with stress.

Making your own snacks is an important first step. Talk to Sophia about how to do it without corn syrup or sugar. She is getting really good at that and just keep trying to create healthier snacks as you learn more.
